So what’s the point?

Is the point of changing your “diet” to get healthy, try new recipes, improve athletic performance, or just get out of a rut?  For example, is the point of going gluten-free to get healthy or to
“feel less guilty” when consuming those *gluten-free* pretzels, cookies, cakes, and other snack-y type things?  It’s one thing if you have celiac or some other type of intolerance and have no choice, but if you’re trying it out to see how it makes you feel, I’m thinking that the benefit will come from that change to healthier, real, unprocessed foods rather than to processed gluten-free junk food.  The same could be said for any “diet” – if you’re a vegetarian who eats pasta, chips, cheese (mmm cheese…) and Tofurky every day, are you really getting anywhere?  Thoughts, anyone?
